First, gather ingredients: 500g beef (chuck or stewing meat), 3 large potatoes, 1 onion, 2 tbsp curry powder (or curry paste), 1 can coconut milk, 2 cloves garlic, 1 tbsp ginger, and salt to taste.

Begin by marinating the beef: cut it into 2-inch cubes, then coat with 1 tbsp curry powder, minced garlic, ginger, and a pinch of salt. Let it sit for 20 minutes. Peel and dice the potatoes into chunks, and slice the onion.
