How to Make Ginger Duck Stew: A Step-by-Step Guide

Ginger Duck Stew, a beloved dish in Southern China, combines tender duck with the sharp warmth of young ginger, creating a comforting yet flavorful meal. Here’s a detailed guide to mastering this recipe.

Ingredients: 1 kg duck (cut into pieces), 200 g young ginger (sliced), 3 garlic cloves (smashed), 5 dried chilies (optional), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, and cooking oil.

Steps:

1. Prep the Duck: Rinse duck pieces and pat dry. Blanch in boiling water for 2 minutes to remove impurities; drain and set aside.

2. Sauté Ginger: Heat oil in a wok. Add young ginger, garlic, and dried chilies. Stir-fry over medium heat until fragrant, about 1 minute.

3. Cook the Duck: Add duck pieces to the wok. Sear until lightly browned, then pour in Shaoxing wine and soy sauce. Stir to coat evenly.

4. Simmer: Pour in enough water to cover the duck. Add oyster sauce and sugar. Bring to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes, until the duck is tender.

5. Thicken (Optional): For a thicker sauce, mix 1 tsp cornstarch with 2 tbsp water and stir into the stew. Simmer for 2 more minutes.

Serving: Serve hot with steamed rice. The tender meat and aromatic ginger-infused broth make this dish a crowd-pleaser. Enjoy the perfect balance of savory and spicy flavors in every bite!
