Ingredients:

- 2 fresh fish fillets (such as cod or tilapia, about 200g each)

- 2 tbsp soy sauce

- 1 tsp sesame oil

- 1 ginger slice, minced

- 2 green onions, chopped

- 1 tsp Shaoxing wine (optional)

- Salt to taste

Steps:

1. Prep the Fish: Rinse fillets under cold water and pat dry with paper towels. Lightly score the flesh diagonally to help heat penetrate evenly. Marinate with 1/2 tsp salt, ginger, and Shaoxing wine for 10 minutes.
