Hollow sesame balls, or "麻球" in Chinese, are golden, crispy treats with a light, hollow center and a sweet sesame coating. Here’s a simple recipe to make them at home.
Ingredients:
- 200g glutinous rice flour
- 50g all-purpose flour
- 80g sugar
- 120ml warm water
- 1 tsp yeast
- Oil for frying
- White sesame seeds (for coating)
Steps:
1. Prepare the dough: Mix glutinous rice flour, all-purpose flour, sugar, and yeast in a bowl. Gradually add warm water and knead into a smooth, soft dough. Let it rest for 30 minutes until slightly risen.
2. Shape the balls: Divide the dough into small balls (about 3cm each). Flatten each piece, wrap a pinch of sugar or sweet red bean paste in the center, then seal and roll into a smooth ball.
3. Coat with sesame: Dip each ball in water, then roll in white sesame seeds to evenly coat.
4. Deep-fry: Heat oil to 160°C. Fry the balls in batches, turning occasionally, until they puff up and turn golden brown (about 5-7 minutes).
5. Drain and serve: Remove with a slotted spoon, drain excess oil, and enjoy warm or at room temperature.
Tips: Ensure the oil temperature is correct—too low, and the balls will absorb oil; too high, and they may burn. The key is patience for a perfectly hollow, crispy texture!
