First, wash 500g of fresh hawthorns and remove the cores. Simmer them in 500ml of water until soft (about 15–20 minutes). Mash the berries into a smooth puree using a blender or fork. Strain the mixture through a sieve to remove seeds and skin, leaving a thick pulp.

Return the pulp to a pot, add 200g of sugar (adjust to taste), and 10g of agar-agar powder (or gelatin for a softer set). Stir over medium heat until the sugar dissolves and the mixture thickens (about 5–7 minutes). Pour the hot mixture into a lightly oiled square dish and let it cool to room temperature. Refrigerate for at least 2 hours, or until firm.

Once set, cut the cake into small cubes and serve. For extra flavor, dust with powdered sugar or drizzle with honey. Store leftovers in an airtight container in the fridge for up to a week.
