Jade and Tofu Rolls, or "Fei Bai Bai Juan," are elegant, healthy Chinese appetizers known for their vibrant colors and delicate texture. Here’s a simple recipe to recreate this dish at home.

Ingredients:

- 200g firm tofu, pressed and grated

- 100g shrimp, minced

- 50g water chestnuts, finely diced

- 2 egg whites

- 1 tsp soy sauce, ½ tsp sesame oil, pinch of salt

- Spinach leaves (for wrapping)

- Oil for steaming

Steps:

1. Prepare the filling: Mix grated tofu, minced shrimp, water chestnuts, soy sauce, sesame oil, and salt in a bowl. Stir until well combined.

2. Make the tofu "jade": In a separate bowl, whisk egg whites lightly. Heat a non-stick pan over low heat, pour a thin layer of egg white, and cook into a thin sheet. Repeat to make 4-5 sheets.

3. Assemble the rolls: Place a spinach leaf on each egg white sheet. Spread a tablespoon of filling in the center. Roll tightly, folding in the sides like a spring roll.

4. Steam and serve: Arrange rolls on a heatproof dish. Steam over high heat for 8-10 minutes until firm. Drizzle with sesame oil and light soy sauce before serving.
