How to Make Liangpi: A Step-by-Step Guide

Liangpi, a beloved Chinese cold noodle dish, is famous for its chewy texture and tangy-savory flavor. Here’s a simple guide to making it at home.

Step 1: Prepare the Batter

Mix 200g wheat flour with 300ml water, stirring until smooth. Let it rest for 30 minutes, then add 1 tsp salt and stir again. Strain the mixture through a cheesecloth to remove lumps, leaving a smooth batter.

Step 2: Cook the Liangpi

Heat a non-stick pan over medium heat. Pour a thin layer of batter and swirl to coat evenly. Cook for 1-2 minutes until set, then flip and cook the other side briefly. Repeat to use all batter, stacking the cooked sheets. Let them cool, then cut into strips.
