How to Make Scallion Oil Hand-Pulled Pancakes

Scallion oil hand-pulled pancakes, a beloved street food snack, are crispy, flaky, and bursting with aromatic scallion flavor. Here’s a simple guide to making them at home.

Ingredients: All-purpose flour (250g), boiling water (120ml), cold water (50ml), salt (1 tsp), scallions (6-8, finely chopped), cooking oil (3 tbsp), sesame oil (1 tbsp).

Steps:

1. Make the dough: In a bowl, mix flour and salt. Gradually add boiling water, stirring until a shaggy dough forms. Add cold water and knead for 5-7 minutes until smooth. Cover and rest for 30 minutes.

2. Prepare the scallion oil: Combine cooking oil, sesame oil, and chopped scallions in a bowl; set aside.
