Scallion oil hand-pulled pancakes, a beloved street food snack, are crispy, flaky, and bursting with aromatic scallion flavor. Here’s a simple guide to making them at home.
Ingredients: All-purpose flour (250g), boiling water (120ml), cold water (50ml), salt (1 tsp), scallions (6-8, finely chopped), cooking oil (3 tbsp), sesame oil (1 tbsp).
Steps:
1. Make the dough: In a bowl, mix flour and salt. Gradually add boiling water, stirring until a shaggy dough forms. Add cold water and knead for 5-7 minutes until smooth. Cover and rest for 30 minutes.
2. Prepare the scallion oil: Combine cooking oil, sesame oil, and chopped scallions in a bowl; set aside.
3. Shape the pancake: Roll the dough into a log, divide into 4 equal portions. Flatten one portion into a thin rectangle, brush with scallion oil, leaving a 1cm border. Fold into a strip, coil it, and tuck the end underneath. Roll out gently into a 0.5cm-thick circle.
4. Cook the pancake: Heat a non-stick pan over medium heat. Add the pancake and cook for 2-3 minutes until golden. Flip, reduce heat to low, and cook another 2 minutes. Press gently with a spatula to ensure even crispness.
5. Serve: Cut into wedges and enjoy warm, optionally dipped in soy-vinegar sauce.
With flaky layers and a savory aroma, these pancakes are perfect for breakfast or as a snack. Adjust scallion quantity to taste!
