Yuanbao jiaozi, named after their gold ingot-like shape, are a festive staple in Chinese cuisine, symbolizing wealth and good fortune. Making them is simple and rewarding, requiring just a few key steps.
Ingredients: For the dough, mix 2 cups of all-purpose flour with ½ cup of warm water and a pinch of salt, kneading into a smooth ball. Let it rest for 30 minutes. For the filling, combine 1 pound of ground pork (or chicken/vegetarian alternatives) with chopped cabbage, minced garlic, ginger, soy sauce, sesame oil, salt, and pepper.
Steps:
1. Roll the wrappers: Divide the dough into small balls, then roll each into a thin 3-inch circle.
2. Fill and fold: Place 1 tablespoon of filling in the center. Fold the wrapper in half, pinch the edges to seal, then bring the two corners together and pinch firmly to form a "purse" shape—this creates the iconic yuanbao look.
3. Cook: Boil water, add jiaozi, and stir gently to prevent sticking. Cook for 3-5 minutes until they float, then drain and pan-fry briefly for a crispy bottom if desired.
Serve with soy-vinegar dipping sauce. These dumplings are perfect for family gatherings or Lunar New Year celebrations!
