Stir-fried clams, or "qing chao hā gé" in Chinese, are a beloved dish for their fresh, briny flavor and quick preparation. Here’s a simple guide to making them at home.
First, prepare the clams: soak them in salted water for 30 minutes to purge sand, then scrub the shells clean. Rinse and drain thoroughly.
Heat 2 tablespoons of oil in a wok over high heat. Add 3-4 sliced cloves of garlic and a thin slice of ginger (optional), stir-frying until fragrant—about 10 seconds. Toss in the clams and stir quickly to coat them in the oil.
Pour in 1 tablespoon of light soy sauce, ½ teaspoon of sugar, and a splash of rice wine or water to create steam. Cover the wok for 2–3 minutes, shaking occasionally, until the clams pop open.
Uncover and add a handful of chopped scallions or cilantro. Stir-fry for another 30 seconds. Taste and adjust seasoning with a pinch of salt if needed. Discard any unopened clams.
