Ingredients: 500g fresh water bamboo, 2 tbsp cooking oil, 3 slices ginger, 2 cloves minced garlic, 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sugar, 1 cup water, and a pinch of salt (optional).
Steps:
1. Prep the Water Bamboo: Peel the tough outer layers of the water bamboo, cut off the root ends, and slice into 2-inch batons or thick rounds. Blanch them in boiling water for 1 minute to remove any bitterness, then drain.
