How to Make Hokkaido Milk Bread with Tangzhong

Hokkaido milk bread, famous for its ultra-soft, fluffy texture, gets its signature tenderness from a key ingredient: *tangzhong* (a flour-water paste). Follow this step-by-step guide to bake perfection at home.

### Step 1: Prepare the Tangzhong

Mix 20g bread flour with 100g milk in a small saucepan. Whisk until smooth. Heat over medium-low heat, stirring constantly, until the mixture thickens into a pudding-like paste (about 65–70°C). Remove from heat, cover, and let cool completely. This gelatinized paste retains moisture, ensuring the bread stays soft for days.

### Step 2: Make the Dough

In a large bowl, combine 300g high-gluten flour, 30g sugar, 3g salt, and 5g yeast. In a separate bowl, whisk together 50g milk, 50g heavy cream, 1 egg, and the cooled tangzhong. Pour the wet ingredients into the dry ingredients and knead with a stand mixer (or by hand) for 15–20 minutes until smooth and elastic. Add 40g softened butter gradually, kneading until fully incorporated. The dough should pass the "windowpane test"—stretch thin without tearing.

### Step 3: First Rise and Shape

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1–1.5 hours, or until doubled in size. Punch down the dough, divide it into 3 equal portions, and roll each into a ball. Cover and rest for 15 minutes. Roll each ball into a 15cm-long oval, then roll it up tightly like a Swiss roll. Place the rolls seam-side down in a greased 450g loaf pan.

### Step 4: Second Rise and Bake

Cover the pan and let the dough rise again for 45–60 minutes, until it reaches 80% of the pan’s height. Brush the top with a thin layer of milk or egg wash for a golden crust. Preheat the oven to 180°C (350°F). Bake for 25–30 minutes. If the top browns too quickly, tent with aluminum foil.

### Step 5: Cool and Enjoy
