Spicy tofu skin sheets (麻辣千张) are a beloved Sichuan snack, known for its chewy texture and bold, numbing flavor. Here’s a simple yet authentic recipe to recreate it at home.
Ingredients: 200g dried tofu skin sheets, 3 tbsp Sichuan peppercorns, 5 dried chili peppers, 2 cloves garlic (minced), 1 tbsp soy sauce, 1 tsp sugar, 1 tbsp vinegar, 2 tbsp cooking oil, and a pinch of salt.
Steps:
1. Prep the tofu skin: Soak dried sheets in warm water for 15 minutes until soft. Drain, cut into 1cm-wide strips, and blanch in boiling water for 30 seconds. Rinse under cold water and set aside.
2. Make the spicy oil: Heat oil in a wok. Add Sichuan peppercorns and dried chilies, stir-fry over low heat until fragrant (about 2 minutes). Remove from heat to cool slightly, then grind into a powder.
3. Combine and season: In a bowl, mix tofu skin strips with the spicy oil powder, garlic, soy sauce, sugar, vinegar, and salt. Toss gently until evenly coated.
4. Marinate: Let it sit for 10 minutes to allow the flavors to meld. For a richer taste, marinate in the fridge for 1–2 hours.
Serve chilled or at room temperature as a flavorful appetizer or side dish. Adjust the spice level by adding more or less chili peppers. Enjoy this addictive, chewy treat that balances heat, numbing spice, and savory umami!
