Steps for shepherd's purse wonton

1
Pick and wash the shepherd's purse and blanch it with hot water (Do not blanch it with boiling water, as it will affect the unique aroma of the shepherd's purse, just blanch it with hot water)
2
Weigh the appropriate amount of meat paste according to the number of people. There are 4 people in my family, old and young, and I weighed about 400 grams (some were left after wrapping, hehe...)
3
Add 1 egg white, a little starch, 3 tablespoons of soybean oil, and a little chicken essence, pepper powder, pepper powder, pepper noodles, and sesame oil into the weighed meat.
4
Stir well the meat filling with the seasoning in step 3, and set aside to taste.
5
Chop all the ingredients (ginger, shepherd's purse, shallots, mushrooms) into powder, put them into the meat filling fed in step 4, then add appropriate amount of salt, stir well, and set aside.
6
Take a proper amount of the wonton skin you bought and prepare a bowl of clear water. Bring the mixed meat paste and start making wontons! (There was originally a finished picture here, but it was accidentally deleted,~~~(>_
7
When the wontons are about to be wrapped, start boiling soup. The soup water for this wonton is clear soup. Specific methods: Add chopped green onion, chopped ginger, a little pepper, chicken essence (do not put it) and appropriate amount of salt, add appropriate amount of water, mix the soup, open fire and cook until it rolls to the boil.
8
After the soup comes to a boil, add in the wrapped wontons and cook.
9
While cooking the wontons, prepare the ingredients in the bowl: put a little of seaweed, shrimp skin, shredded cucumber, and minced coriander in each person's bowl.
10
After the wontons are cooked, pour them into each bowl. A bowl of delicious meat wontons was born like this! Wow, this is so delicious!
