How to Make Pan-Fried Dumplings (Guotie)

Pan-fried dumplings, or *guotie*, are beloved for their crispy golden bottoms and tender, juicy fillings. Here’s a simple guide to making them at home.

Step 1: Prepare the Filling

Mix ground pork (or chicken/veggies) with chopped cabbage, scallions, ginger, garlic, soy sauce, sesame oil, salt, and pepper. For a classic touch, add a splash of water to keep the filling moist. Chill for 30 minutes to enhance flavors.

Step 2: Assemble the Dumplings

Place a teaspoon of filling in a dumpling wrapper. Fold it in half, pinch the center, then create pleats along the edge to seal tightly, ensuring no filling leaks out. Repeat for all wrappers.

Step 3: Pan-Fry to Perfection

Heat 2 tablespoons of oil in a non-stick pan over medium heat. Arrange dumplings in a single layer, flat-side down. Fry for 2-3 minutes until bottoms turn golden. Pour in ½ cup of water (or a flour-water mixture for extra crispiness), then cover immediately. Steam for 5-8 minutes until water evaporates and dumplings are cooked through.

Step 4: Serve Hot

Uncover and let the bottoms crisp up for another 1-2 minutes. Flip onto a plate, crispy-side up. Serve with soy-vinegar dipping sauce or chili oil.
