How to Make Savory Pickled Cabbage and Pork Dumplings

Pickled cabbage and pork dumplings, a beloved comfort food, are prized for their tangy, juicy filling and tender wrapper. Here’s a step-by-step guide to crafting these delicious dumplings at home.

Step 1: Prepare the Filling

Start by marinating 300g of ground pork with 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp white pepper, and a pinch of salt. Let it sit for 15 minutes. Meanwhile, finely chop 200g of pickled cabbage (squeezed to remove excess brine) and 2 green onions. Mix the pork, pickled cabbage, and onions until well combined. For extra juiciness, add 1 tbsp minced ginger and 1 crushed garlic clove.

Step 2: Make the Wrapper

Combine 250g all-purpose flour with 120ml warm water. Knead into a smooth dough, cover, and let rest for 30 minutes. Divide the dough into small balls, then roll each into a thin 8cm circle.

Step 3: Assemble and Cook

Place 1 tsp of filling in the center of a wrapper. Fold it in half, pinch the edges to seal, and create pleats for a classic shape. To cook, boil water, add dumplings, and cook for 5-7 minutes until they float. For a crispier texture, pan-fry them in oil until golden on both sides after boiling.

Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. Enjoy these flavorful dumplings as a satisfying meal or snack!
