Auspicious and Lucky Spring Rolls, or "Jixiang Riju Juan" in Chinese, are symbolic of good fortune and prosperity, perfect for festivals or family gatherings. Here’s a simple yet delicious recipe to make them at home.
Ingredients:
- 10 spring roll wrappers
- 200g ground pork (or chicken/tofu for vegetarian)
- 1 carrot, julienned
- 100g cabbage, thinly sliced
- 2 shiitake mushrooms, soaked and chopped
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Salt, pepper, and a pinch of sugar to taste
- Oil for frying
Steps:
1. Prepare the Filling: Sauté ground pork in a pan until browned. Add carrots, cabbage, and mushrooms, stir-frying for 3–4 minutes until softened. Season with soy sauce, sesame oil, salt, pepper, and sugar. Let cool.
2. Wrap the Rolls: Lay a spring roll wrapper flat. Place 2–3 tablespoons of filling near one corner. Fold the bottom corner over the filling, fold in the sides, then roll tightly into a cylinder. Seal the edge with a little water.
3. Fry to Perfection: Heat oil in a deep pan to 180°C (350°F). Fry rolls in batches for 3–4 minutes, turning occasionally, until golden brown and crispy. Drain on paper towels.
Serving Tip: Enjoy hot with sweet chili sauce or duck dipping sauce. These crispy, savory rolls not only delight the taste buds but also bring a touch of luck to your table!
