Shrimp and tofu soup is a light, nutritious, and easy-to-make dish perfect for any season. Here’s a simple step-by-step guide to create this flavorful soup in just 30 minutes.

Ingredients:

- 200g fresh shrimp, peeled and deveined

- 300g soft tofu, cubed

- 1 liter chicken or vegetable broth

- 2 green onions, chopped

- 1 small ginger slice, minced

- 1 garlic clove, minced

- 1 tbsp soy sauce

- 1 tsp sesame oil

- Salt and pepper to taste

- Optional: a handful of spinach or mushrooms for extra flavor.

Instructions:

1. Prep the ingredients: Clean the shrimp, pat dry, and marinate with a pinch of salt. Cube the tofu and set aside. Chop green onions, ginger, and garlic.

2. Sauté aromatics: Heat a pot over medium heat, add a little oil, and sauté ginger and garlic until fragrant.

3. Cook the shrimp: Add the shrimp and stir-fry for 1–2 minutes until they turn pink. Remove and set aside.
