How to Make Savoy Cabbage and Pork Dumplings

Savoy cabbage and pork dumplings, a beloved comfort food, are surprisingly easy to make. Follow this guide to create plump, flavorful dumplings with a perfect balance of textures.

Ingredients:

- 300g ground pork (preferably with some fat for juiciness)

- 500g savoy cabbage, finely chopped

- 2 tbsp soy sauce

- 1 tbsp sesame oil

- 1 tsp ginger, minced

- 2 cloves garlic, minced

- Salt and pepper to taste

- Dumpling wrappers (store-bought or homemade)

- Water for sealing

Steps:

1. Prepare the filling: Squeeze excess water from the chopped cabbage using a cheesecloth or your hands—this prevents soggy dumplings. In a bowl, mix ground pork, cabbage, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Stir vigorously for 2-3 minutes until the mixture becomes sticky.

2. Fill the dumplings: Place a wrapper on your palm. Add 1 tablespoon of filling in the center. Fold the wrapper in half, pinching the edges to seal. For a classic pleat, create small folds along one side before sealing completely.

3. Cook the dumplings: Boil a large pot of water. Add dumplings in batches (avoid overcrowding). Cook for 3-4 minutes until they float. For a crispier texture, pan-fry them: heat oil in a non-stick pan, arrange dumplings, fry until golden, then add 2 tablespoons of water, cover, and steam for 2 minutes.
