Hearty Beef and Root Vegetable Stew: A Comprehensive Guide

Ingredients: 500g beef brisket, cut into 2-inch cubes; 2 potatoes, peeled and halved; 2 carrots, sliced; 1 onion, diced; 3 garlic cloves, minced; 1 tbsp tomato paste; 500ml beef broth; 2 bay leaves; 1 tsp dried thyme; Salt and pepper to taste; 2 tbsp oil for searing.

Steps:
