500g fresh shiitake mushrooms (stems removed), 3-4 dried shiitake mushrooms (soaked in warm water until soft), 3 garlic cloves (minced), 1 tbsp ginger (grated), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1/2 cup vegetable oil, 1 cup water or mushroom soaking liquid, 1 green onion (chopped), and a pinch of white pepper.

Instructions:

1. Prepare the Mushrooms: If using fresh shiitake, wipe them clean with a damp cloth to avoid waterlogging. For dried mushrooms, reserve the soaking liquid.
