Hollow sesame balls, or "mátuán" in Chinese, are crispy on the outside, chewy on the inside, and filled with sweet sesame paste. Here’s a simple recipe to make them at home.
Ingredients:
- 200g glutinous rice flour
- 100g wheat starch
- 120ml boiling water
- 50g sugar
- 1 tbsp vegetable oil
- Black sesame paste (or red bean paste) for filling
- White sesame seeds for coating
Steps:
1. Prepare the dough: Mix glutinous rice flour, wheat starch, and sugar in a bowl. Gradually add boiling water and vegetable oil, stir until a smooth dough forms. Knead for 5 minutes until elastic. Cover and rest for 15 minutes.
2. Shape the balls: Divide the dough into small balls (about 30g each). Flatten each piece, wrap in 1 tsp of sesame paste, and seal tightly. Roll into smooth balls.
3. Coat with sesame: Dip the balls in water, then roll in white sesame seeds to coat evenly.
4. Deep-fry: Heat oil to 160°C. Fry the balls in low heat, turning occasionally, until they float and expand (about 5-7 minutes). Increase heat to 180°C and fry for another 1-2 minutes until golden brown.
Tips: Ensure the dough is well-kneaded for a chewy texture. Fry slowly to allow the inside to hollow out. Serve warm for the best taste! Enjoy this crispy, sweet treat with tea or as a dessert.
