Braised Duck Legs: A Step-by-Step Guide

Braised duck legs, a beloved dish in Chinese cuisine, are tender, savory, and bursting with flavor. Here’s a simple yet delicious recipe to recreate this restaurant favorite at home.

Ingredients:

4 duck legs, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sugar, 1 cinnamon stick, 2 star anise, 3 slices ginger, 2 cloves garlic, 1 cup water, and vegetable oil for searing.

Instructions:

1. Prepare the duck legs: Pat them dry and score the skin with a knife to help render fat.

2. Sear until golden: Heat oil in a pot over medium-high heat. Sear duck legs skin-side down for 5-6 minutes until crispy. Flip and sear the other side for 2 minutes. Remove and set aside.

3. Aromatics: In the same pot, stir-fry ginger, garlic, and star anise until fragrant.

4. Simmer: Return duck legs to the pot. Add soy sauces, Shaoxing wine, sugar, cinnamon, and water. Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes, or until the meat is fork-tender.

5. Reduce sauce: Uncover and increase heat to thicken the sauce, glazing the legs evenly. Serve hot with rice or steamed buns.

This dish balances rich umami with subtle sweetness, making it a comforting meal for any occasion. Enjoy!
