How to Make Homemade Shrimp Oil: A Simple Guide

Homemade shrimp oil is a flavorful and versatile ingredient that can elevate dishes like noodles, stir-fries, and soups. Making it is easy and requires just a few simple steps.

First, gather fresh shrimp heads and shells (from about 1 lb of shrimp), as they are the star ingredients for rich flavor. Rinse them thoroughly to remove any impurities, then pat dry with a paper towel. For extra depth, you can optionally add aromatics like smashed garlic, ginger slices, or a pinch of peppercorns.

Next, heat a neutral oil (such as canola or vegetable oil) in a saucepan over low to medium heat. The oil should cover the shells by about an inch. Once hot, add the shrimp shells and aromatics, then reduce the heat to low. Let them simmer gently for 20-30 minutes, stirring occasionally, until the shells turn crispy and reddish, and the oil releases a fragrant, shrimp-like aroma. Be careful not to burn them, as this can make the oil bitter.

Once done, strain the oil through a fine-mesh sieve or cheesecloth into a clean, airtight jar. Discard the solids. The shrimp oil will keep in the refrigerator for up to 2 weeks.
