Ingredients: 200g pork loin (sliced thin), 2 eggs (beaten), 100g wood ear mushrooms (soaked, sliced), 50g shiitake mushrooms (sliced), 1 carrot (julienned), 2 scallions (chopped), 3 cloves garlic (minced). For the sauce: 1 tbsp soy sauce, 1 tsp oyster sauce, 1/2 tsp sesame oil, 1 pinch sugar, and 2 tbsp water.

Instructions:

1. Marinate the pork: In a bowl, mix pork with 1 tsp soy sauce, 1/2 tsp cornstarch, and 1 tbsp cooking wine. Let sit for 15 minutes.

2. Stir-fry eggs: Heat 2 tbsp oil in a wok. Pour in beaten eggs, scramble until set, then remove.

3. Cook pork: Add 1 tbsp oil. Stir-fry marinated pork over high heat until golden. Remove and set aside.

4. Sauté vegetables: In the same wok, stir-fry garlic, mushrooms, and carrot for 2 minutes until fragrant.

5. Combine: Return pork and eggs to the wok. Pour in the sauce mixture, toss quickly, and cook for 1 minute. Garnish with scallions.
