Braised loach with tofu is a beloved Asian dish prized for its umami-rich broth and tender, melt-in-your-mouth textures. Here’s a step-by-step guide to crafting this comforting meal.
Ingredients: 500g fresh loach (cleaned and gutted), 300g soft tofu (cut into cubes), 1 ginger slice (julienned), 3 garlic cloves (smashed), 1 green onion (chopped), 2 dried chili peppers (optional), 1 tbsp cooking wine, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, salt to taste, and 500ml water or broth.
Steps:
1. Prep the loach: Rinse loach, pat dry, and season with a pinch of salt. Heat oil in a pot, lightly sear loach over medium heat until golden (about 2 minutes per side); set aside.
2. Sauté aromatics: In the same pot, stir-fry ginger, garlic, and dried chilies until fragrant. Add the seared loach, cooking wine, light soy sauce, and dark soy sauce. Toss to coat evenly.
3. Simmer: Pour in water or broth, bring to a boil, then reduce heat. Cover and simmer for 15 minutes to let the loach absorb flavors.
4. Add tofu: Gently place tofu cubes into the pot. Simmer for another 8–10 minutes, until tofu is soft but holds its shape. Season with sugar and salt.
5. Finish: Garnish with chopped green onions. Serve hot with steamed rice for a satisfying meal.
Tip: For a creamier broth, use silken tofu and simmer longer to allow flavors to meld. Enjoy this wholesome, protein-packed dish!
