Ingredients: 500g fresh loach (cleaned and gutted), 300g soft tofu (cut into cubes), 1 ginger slice (julienned), 3 garlic cloves (smashed), 1 green onion (chopped), 2 dried chili peppers (optional), 1 tbsp cooking wine, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, salt to taste, and 500ml water or broth.
