Tea-flavored quail eggs are a popular snack in Asia, prized for their savory, aromatic flavor and tender, creamy texture. Here’s a simple yet delicious recipe to make them at home.
Ingredients:
- 20 quail eggs
- 1 black tea bag (or 2 tbsp loose black tea)
- 1 cup water
- 2 tbsp soy sauce
- 1 tbsp light soy sauce
- 1 tsp sugar
- 1 star anise (optional)
- 1 cinnamon stick (optional)
- 2 cloves of garlic (smashed)
- 1 slice of ginger
Instructions:
1. Boil the eggs: Place quail eggs in a small pot, cover with cold water, and bring to a boil. Cook for 3 minutes, then transfer to an ice bath to stop the cooking. Gently crack the shells all over for marination.
2. Prepare the tea broth: In a saucepan, combine water, black tea, soy sauces, sugar, star anise, cinnamon, garlic, and ginger. Bring to a simmer over medium heat and cook for 5 minutes.
3. Marinate the eggs: Add the cracked quail eggs to the tea broth. Reduce heat to low, cover, and let simmer for 20–30 minutes (longer for stronger flavor). Turn off the heat and let the eggs steep in the broth for at least 1 hour (or overnight for best results).
4. Serve: Enjoy the tea-flavored quail eggs warm or chilled. They make a perfect appetizer or snack!
For variety, try adding other spices like Sichuan peppercorns or replacing black tea with oolong or jasmine tea. Experiment with marinades to create your own signature flavor!
