Step 1: Choose Fresh Pineapples

Select ripe, fragrant pineapples with golden skin. Avoid overripe ones, as they may turn mushy when dried.

Step 2: Prepare the Pineapple

Wash, peel, and core the pineapple. Slice it into uniform pieces—about ¼ to ½ inch thick for even drying. Thinner slices dry faster but become crispier; thicker ones stay chewy. Remove any "eyes" for a smoother texture.

Step 3: Pre-Treat (Optional)

To prevent browning and retain color, soak slices in a mixture of 1 cup water + 1 tablespoon lemon juice or salt for 10 minutes. Drain well.

Step 4: Dry the Pineapple

Oven Method: Preheat to 175°F (80°C). Arrange slices on a baking sheet lined with parchment paper. Dry for 6–8 hours, flipping halfway.

Dehydrator: Set to 135°F (57°C). Dry for 8–12 hours until leathery but not sticky.

Sun-Drying: Place slices on a rack in direct sunlight for 2–3 days (turn daily), ideal for warm, dry climates.

Step 5: Store

Let cool completely. Store in airtight containers or vacuum-sealed bags for up to 6 months in a cool, dark place.
