How to Make Japanese Tofu on a Hot Plate

Japanese tofu, or *age dashi tofu*, is a beloved dish known for its crispy exterior and silky interior. Cooking it on a hot plate elevates the experience, creating a sizzling, restaurant-quality meal at home. Here’s a simple guide to mastering it.

Ingredients: 2 blocks of silken tofu, 1 egg, ½ cup panko breadcrumbs, 3 tbsp flour, vegetable oil for frying, 2 tbsp soy sauce, 1 tsp mirin, 1 tsp sugar, and sliced green onions.

Steps:

1. Prep the Tofu: Drain the silken tofu, cut it into thick rectangles, and pat dry with paper towels. Lightly coat each piece in flour, dip in beaten egg, then roll in panko for an even crust.

2. Deep-Fry: Heat oil to 170°C (340°F). Fry tofu for 3–4 minutes per side until golden and crispy. Drain on a wire rack.

3. Make the Sauce: In a small bowl, mix soy sauce, mirin, and sugar until the sugar dissolves.

4. Serve on Hot Plate: Place the hot plate on the stove over medium heat. Drizzle a little oil, add the fried tofu, and pour the sauce over it. Let it sizzle, garnish with green onions, and serve immediately with steamed rice or veggies.
