Ingredients:
- 300g all-purpose flour
- 150ml warm water
- 5g active yeast
- 50g sugar
- 100g dried jujubes (pitted and soaked until soft)
- A pinch of salt
Steps:
1. Activate yeast: Mix warm water, yeast, and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
2. Make dough: In a large bowl, combine flour, salt, and remaining sugar. Pour in the yeast mixture and knead into a smooth dough. Cover and let it rise in a warm place for 1–2 hours until doubled in size.
3. Prepare filling: Chop soaked jujubes into small pieces.
4. Shape buns: Punch down the dough and divide it into small balls. Flatten each ball, place a spoonful of jujube filling in the center, and seal the edges.
5. Proof and steam: Place the buns on a parchment-lined tray, cover, and let them rise for 20 minutes. Steam over high heat for 15–20 minutes. Rest for 5 minutes before serving.
