How to Make Spiced Beef Jerky: A Comprehensive Guide

Spiced beef jerky, a savory and chewy snack, is a beloved delicacy with roots in Chinese cuisine. Making it at home is simple and rewarding. Here’s a step-by-step guide to achieve tender, flavorful beef jerky every time.

Ingredients: 500g lean beef (sirloin or flank), 3 soy sauce, 2 oyster sauce, 1 Shaoxing wine, 1 sugar, 1 five-spice powder, 1 Sichuan peppercorns (crushed), 1 cinnamon stick, 3 star anise, 1 ginger (sliced), 3 garlic cloves (minced), and a pinch of salt.

Instructions:

1. Prepare the Beef: Trim fat from the beef and slice it into thin, even strips (about 2mm thick). For easier slicing, partially freeze the beef for 1 hour.

2. Marinate: In a bowl, mix soy sauce, oyster sauce, Shaoxing wine, sugar, five-spice powder, peppercorns, cinnamon, star anise, ginger, garlic, and salt. Add beef strips, ensuring they are fully coated. Marinate for at least 4 hours (or overnight for deeper flavor).

4. Dry: Transfer beef to a baking tray lined with parchment paper. Dry in an oven at 70°C (160°F) for 2–3 hours, or until chewy. For air fryers, cook at 60°C for 1.5 hours.
