How to Make Pork and Green Vegetable Congee

Pork and green vegetable congee is a comforting, nutritious one-pot meal perfect for any time of day. Here’s a simple guide to making it from scratch.

Ingredients: ½ cup rice (soaked for 30 minutes), 100g lean pork (minced or thinly sliced), 1 cup chopped green vegetables (like bok choy or spinach), 4 cups water or broth, 1 tbsp cooking oil, salt, white pepper, and a pinch of sesame oil for garnish.

Steps:

1. Cook the Congee Base: Rinse the soaked rice, add it to a pot with water/broth, and bring to a boil. Reduce heat to low, simmer for 30–40 minutes, stirring occasionally, until the rice breaks down into a thick, porridge-like consistency.
