Steamed Clams and Egg Custard: A Simple Delicacy

Steamed clams and egg custard is a beloved Chinese dish prized for its silky texture and fresh, umami-rich flavor. This easy recipe combines tender clams with a smooth, savory egg custard, perfect as a comforting starter or light meal.

Ingredients:

- 150g fresh clams, cleaned

- 3 large eggs

- 200ml warm water or stock

- 1 tsp salt (or to taste)

- 1 tsp soy sauce (optional)

- 1 tsp sesame oil

- Chopped green onions for garnish

Steps:

1. Prep the clams: Soak clams in salted water for 30 minutes to remove sand. Rinse thoroughly and set aside.

2. Make the custard: Beat eggs in a bowl. Add warm water, salt, and soy sauce (if using), stirring gently to avoid bubbles. Strain through a fine sieve for extra smoothness.

3. Assemble: Place clams at the bottom of a heatproof dish. Pour the egg mixture over them. Cover with a plate or foil.

4. Steam: Bring water to a boil in a steamer. Gently place the dish in, reduce heat to medium, and steam for 12-15 minutes, or until the custard sets (a toothpick inserted should come out clean).

5. Finish: Drizzle with sesame oil and garnish with green onions. Serve hot.

Tips: For a richer taste, use chicken stock instead of water. Ensure the water is warm, not boiling, to prevent the custard from curdling. Enjoy this delicate dish with steamed rice for a complete meal!
