Ingredients:
- Glutinous rice (2 cups, soaked for 4 hours)
- Eight treasures: red beans, lotus seeds, dried dates, walnuts, chestnuts, osmanthus, candied melon, and raisins (soaked and pre-cooked)
- Bamboo leaves (30-40, soaked overnight and boiled)
- Sugar or honey (to taste)
Steps:
1. Prepare Leaves: Rinse boiled leaves, trim stems, and pat dry.
2. Mix Rice: Drain soaked rice, mix with 1 tbsp sugar and a pinch of salt.
3. Shape Zongzi: Place 2 leaves overlapping, fold into a cone. Add a spoonful of rice, then 2-3 treasures, top with more rice. Fold leaves tightly into a pyramid, tie with string.
4. Cook: Place zongzi in a pot, cover with water, and simmer for 2-3 hours (pressure cook for 45 mins). Turn off heat and let steep for 1 hour for extra flavor.
