Hong Kong-style milk toast, renowned for its pillowy softness and subtly sweet flavor, is a beloved staple. Mastering this bread at home is simpler than it seems—here’s a concise guide to achieving bakery-perfect results.

Ingredients & Dough Prep:

The secret lies in the tangzhong (water roux): mix 20g bread flour with 100ml milk, cook over low heat until thickened (resemble paste), then cool. Combine 300g high-gluten flour, 40g sugar, 5g salt, and 3g yeast in a bowl. Add the tangzhong, 100ml milk, 50g egg, and 40g softened butter. Knead until smooth and elastic, about 20 minutes.

Proofing & Shaping:

Let the dough rise in a warm place until doubled in size (1–1.5 hours). Punch it down, divide into equal portions (e.g., 80g each), and roll into balls. Rest for 15 minutes, then shape into oval loaves. Place in greased toast tins, proof until puffy (30–40 minutes).

Baking:

Brush the tops with egg wash. Bake at 180°C (350°F) for 25–30 minutes until golden. For extra gloss, brush with honey or butter halfway through. Cool completely before slicing to enjoy its signature fluffy texture, perfect for toasting with butter or jam.
