How to Make Plain Tofu: A Simple Guide

Plain tofu, or "soba tofu," is a versatile dish celebrated for its delicate texture and ability to absorb flavors. Here’s a basic guide to making it at home.

Ingredients:

- 1 block (350g) firm or extra-firm tofu

- 1 tsp salt

- 2 cups water (for brining)

- Optional: 1 tbsp soy sauce, 1 tsp sesame oil, or scallions for garnish.

Steps:

1. Prepare the Tofu: Drain the tofu and gently press it between paper towels for 15–20 minutes to remove excess water. This ensures a firmer texture.

2. Brine (Optional): Dissolve 1 tsp salt in 2 cups of water. Submerge the pressed tofu in the brine and let it sit for 10 minutes to enhance flavor.

3. Cooking Methods:

- Steaming: Cut tofu into cubes. Place on a heatproof dish, steam over medium heat for 10–12 minutes until heated through.

- Simmering: Add tofu to a pot of boiling water or light broth (e.g., dashi and soy sauce). Simmer for 5–7 minutes.

- Pan-Frying: Heat 1 tbsp oil in a pan. Fry tofu cubes over medium heat until golden on all sides (4–5 minutes per side).

4. Serve: Garnish with soy sauce, sesame oil, or scallions. Enjoy plain or with rice, noodles, or stir-fries.

Plain tofu is a blank canvas—experiment with broths, spices, or sauces to suit your taste!
