How to Make Braised Eggs: A Simple Guide

Braised eggs, a beloved comfort dish, are tender, savory, and bursting with flavor. Here’s a step-by-step guide to perfecting them at home.

Ingredients: 6-8 eggs, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp sugar, 5-6 star anise, 1 cinnamon stick, 3-4 slices ginger, 2 cloves garlic, and enough water to cover.

Steps:

1. Boil and peel eggs: Place eggs in cold water, bring to a boil, then simmer for 7 minutes. Transfer to ice water, peel gently, and score lightly with a fork for better flavor absorption.

2. Prepare the braising liquid: In a pot, add soy sauces, sugar, star anise, cinnamon, ginger, and garlic. Pour in water (about 2 cups) and bring to a simmer.

3. Braise the eggs: Gently place eggs in the liquid, ensuring they’re fully submerged. Simmer on low heat for 20-30 minutes, turning occasionally for even coloring.

4. Rest and serve: Turn off the heat and let the eggs steep in the liquid for at least 1 hour (or overnight for richer taste). Reheat gently before serving, garnished with sesame or green onions.

Tips: For a sweeter version, add a pinch of rock sugar. Adjust soy sauce to taste for saltiness. Enjoy these eggs as a snack, side dish, or with rice!
