Minced eggplant (肉末茄条) is a beloved Chinese dish known for its tender eggplant and savory, umami-rich flavor. Here’s a simple yet delicious recipe to recreate it at home.
Ingredients: 2 long eggplants, 200g ground pork, 3 garlic cloves, 1 ginger slice, 2 chili peppers (optional), 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cooking wine, salt, and vegetable oil.
Steps:
1. Prep the eggplant: Wash the eggplants, trim the ends, and cut them into 1cm-thick strips. Soak in salted water for 10 minutes to remove bitterness, then pat dry.
2. Cook the eggplant: Heat oil in a wok over medium-high heat. Stir-fry the eggplant strips until golden and tender (about 5 minutes). Set aside.
3. Sauté the mince: In the same wok, add a little oil. Sauté minced garlic, ginger, and chili until fragrant. Add ground pork, breaking it up with a spatula, and cook until browned.
4. Combine and season: Return the eggplant to the wok. Pour in soy sauce, oyster sauce, sugar, and cooking wine. Stir-fry for 2 minutes until well-coated. Adjust seasoning with salt if needed.
5. Serve: Garnish with chopped green onions and serve hot with steamed rice.
This dish balances the eggplant’s creamy texture with the pork’s richness, making it a comforting meal for any occasion. Enjoy!
