How to Make Minced Eggplant: A Step-by-Step Guide

Minced eggplant (肉末茄条) is a beloved Chinese dish known for its tender eggplant and savory, umami-rich flavor. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients: 2 long eggplants, 200g ground pork, 3 garlic cloves, 1 ginger slice, 2 chili peppers (optional), 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cooking wine, salt, and vegetable oil.

Steps:

1. Prep the eggplant: Wash the eggplants, trim the ends, and cut them into 1cm-thick strips. Soak in salted water for 10 minutes to remove bitterness, then pat dry.

2. Cook the eggplant: Heat oil in a wok over medium-high heat. Stir-fry the eggplant strips until golden and tender (about 5 minutes). Set aside.
