Stir-fried garlic sausage with scallions is a quick, flavorful dish that balances the richness of cured sausage with the freshness of young garlic. Here’s a simple guide to making it at home.
Ingredients:
200g Chinese garlic sausage (lap cheong), 1 bunch young garlic (cleaned and cut into 3-4cm segments, separating whites from greens), 2-3 dried red chilies (sliced, optional), 1 tbsp cooking oil, 1 tsp light soy sauce, ½ tsp sugar, a pinch of white pepper, and sesame oil for finishing.
Steps:
1. Prep the Sausage: Slice the sausage diagonally into 0.5cm thick pieces. If the sausage is very salty, blanch it in boiling water for 1 minute, then drain.
2. Stir-Fry: Heat oil in a wok over medium heat. Add sausage slices and stir-fry until the edges turn slightly crispy and fragrant (about 2 minutes). Push the sausage to one side.
3. Cook Garlic: Add dried chilies (if using) to the empty side of the wok and stir-fry until fragrant. Toss in the white parts of the young garlic and stir-fry for 1 minute until softened.
4. Combine and Season: Add the green parts of the garlic, then pour in soy sauce, sugar, and white pepper. Toss everything together for 30 seconds until the greens are wilted but still vibrant.
5. Finish: Drizzle a few drops of sesame oil, stir once, and serve hot with steamed rice.
Tips: For a smokier flavor, use a cast-iron wok. Adjust soy sauce if your sausage is already salty. Enjoy this savory, aromatic dish in under 10 minutes!
