How to Make Pork and Chive Pancakes

Pork and chive pancakes are a savory, satisfying dish with a crispy exterior and juicy filling. Here’s a simple guide to making them at home.

Ingredients: For the dough, mix 2 cups all-purpose flour with ¾ cup warm water and a pinch of salt. Knead until smooth, then let rest for 30 minutes. For the filling, combine 300g ground pork with 2 cups finely chopped chives, 1 tbsp soy sauce, 1 tsp sesame oil, ½ tsp salt, and a dash of pepper.

Steps:

1. Prepare the dough: Divide the rested dough into 8 equal balls. Roll each into a thin circle, brush with oil, and roll it up like a scroll. Coil the scroll into a flat circle again, then roll it out into a 6-inch pancake.

2. Add filling: Place 2-3 tablespoons of the pork-chive mixture in the center, fold the edges over, and seal tightly by pinching. Flatten gently.

3. Cook: Heat a non-stick pan over medium heat. Add 1 tbsp oil and place a pancake in the pan. Cook for 3-4 minutes per side until golden brown and crispy. Repeat for remaining pancakes.
