How to Make Braised Duck: A Step-by-Step Guide

Braised duck, with its tender meat and rich, savory sauce, is a beloved dish in Chinese cuisine. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients: 1 whole duck (about 1.5 kg), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sugar, 1 piece of rock sugar, 5 slices of ginger, 3 cloves of garlic, 1 cinnamon stick, 2 star anise, 1 cup water, and vegetables like bok choy or mushrooms for garnish.

Steps:

1. Prep the duck: Rinse the duck and pat dry. Prick the skin with a fork to help render fat. Blanch in boiling water for 5 minutes, then drain.

2. Sauté aromatics: Heat oil in a wok. Stir-fry ginger, garlic, cinnamon, and star anise until fragrant.

3. Brown the duck: Add the duck, searing until golden on all sides. Pour in Shaoxing wine and let it evaporate.

4. Simmer: Mix soy sauces, sugar, and rock sugar. Add water, then bring to a boil. Reduce heat, cover, and simmer for 1.5–2 hours, turning the duck occasionally, until tender.

5. Reduce sauce: Uncover, increase heat, and simmer until the sauce thickens into a glossy glaze.

6. Serve: Carve the duck and drizzle with sauce. Garnish with bok choy or mushrooms.

Tips: For extra flavor, marinate the duck overnight. Adjust sugar and soy sauce to taste. Enjoy this hearty dish with steamed rice!
