How to Make Milk Sturgeon Soup: A Comprehensive Guide

Milk sturgeon soup, a nourishing delicacy, is loved for its creamy texture and health benefits. Here’s a detailed guide to making it at home.

Ingredients: 150g dried fish maw (soaked and cleaned), 200g fish fillet (e.g., cod or grouper), 500ml full-fat milk, 1 egg white (optional, for clarity), 3 slices ginger, 1 scallion, salt, and pepper to taste.

Steps:

1. Prep the Fish Maw: Soak dried fish maw in water for 4–6 hours until soft. Rinse, remove any impurities, and cut into bite-sized pieces. Blanch in boiling water for 1 minute, then drain.

2. Cook the Broth: Bring 500ml water to a boil. Add ginger, scallion, and fish fillet. Simmer for 10 minutes over low heat until the fish is tender. Remove the fish, flake it, and strain the broth to remove solids.

3. Simmer the Soup: Return the broth to the pot. Add fish maw and milk. Heat gently over low heat (do not boil vigorously to prevent curdling). If using, stir in egg white slowly to create a clearer broth.

4. Season and Finish: Simmer for 15–20 minutes until the fish maw is soft. Season with salt and pepper. Garnish with chopped scallion before serving.

Tips: For richer flavor, use coconut milk or a mix of milk and cream. Avoid high heat to keep the soup smooth. Enjoy this warm, nutritious soup as a comforting meal or tonic!
