Ingredients: 1 whole chicken (about 1.2 kg, cut into pieces), 200 g dried tea tree mushrooms (soaked until soft), 5-6 dried red dates, 3-5 slices of ginger, 2-3 scallions (tied), salt, and a pinch of white pepper.

Steps:

1. Prep the chicken: Rinse chicken pieces, blanch in boiling water for 3 minutes to remove impurities, then drain and set aside. Soak tea tree mushrooms in warm water for 20 minutes, trim the roots, and cut into strips.
