How to Make Crispy Pork Tenderloin with Spicy Salt

Crispy pork tenderloin with spicy salt is a beloved dish, loved for its golden crust, tender meat, and aromatic seasoning. Here’s a simple guide to making it at home.

Ingredients: 300g pork tenderloin, 1 egg, 100g cornstarch, 2 tbsp flour, 1 tsp baking powder, salt, pepper, 5 dried chilies, 1 tsp Sichuan peppercorns, 2 garlic cloves, 1 green onion.

Steps:

1. Marinate the pork: Cut the tenderloin into 1.5cm thick strips. Marinate with salt, pepper, and a pinch of baking powder for 20 minutes.

2. Prepare the batter: Mix egg, cornstarch, flour, and a little water to form a smooth, thick batter. Dip each pork strip into the batter, ensuring even coating.

3. Deep-fry: Heat oil to 170°C. Fry the pork in batches until golden brown and crispy (about 3-4 minutes). Drain excess oil.
