Jade dumplings, or "Feicui Shuijiao," are a vibrant and healthy Chinese dumpling variety, named for their emerald-green wrapper, reminiscent of jade. Here’s a simple guide to making them at home.
For the Wrapper (Serves 4):
Mix 200g all-purpose flour with a pinch of salt. Gradually add 100ml warm water and 1 tsp spinach juice (from blended spinach) until a smooth dough forms. Knead for 10 minutes, then rest covered for 30 minutes.
For the Filling:
Combine 200g ground pork (or chicken/tofu for a vegetarian option) with 100g finely chopped water chestnuts, 2 tbsp soy sauce, 1 tsp sesame oil, 1 minced garlic clove, and salt to taste. Mix well.
Assembly & Cooking:
Roll the dough into thin sheets, then cut into 8cm circles. Place 1 tsp of filling in the center, fold into a half-moon, and pinch the edges to seal. Bring a large pot of water to a boil. Add dumplings, stir gently to prevent sticking, and cook for 5-7 minutes until they float. Drain and serve with a dipping sauce of soy sauce, vinegar, and chili oil.
