How to Make Clear-Steamed Pigeon Soup: A Simple Guide

Clear-steamed pigeon soup is a nourishing delicacy prized for its simplicity and health benefits. Here’s a step-by-step guide to crafting this comforting dish.

Ingredients: 1 fresh pigeon (about 500g), 1 liter of water, 3-5 slices of ginger, 2 scallions (tied into knots), 10 red dates (pitted), 5 goji berries, a pinch of salt, and 1 tsp of rice wine (optional).

Instructions:

1. Prepare the pigeon: Clean the pigeon thoroughly, removing innards. Pat dry and trim excess fat. Blanch it in boiling water for 2 minutes to remove impurities, then rinse under cold water.

2. Simmer: Place the pigeon in a clay pot or deep pot. Add ginger, scallions, red dates, goji berries, and rice wine (if using). Pour in water, ensuring the pigeon is fully submerged.

3. Cook: Bring to a boil over high heat, then reduce to low heat. Cover and simmer for 1.5–2 hours, or until the meat is tender and the soup turns golden. Skim off any foam occasionally for a clearer broth.

4. Season: Add salt to taste just before serving. Discard ginger and scallions.

Serving: Ladle the hot soup into bowls, with the pigeon meat and ingredients. Pairs well with steamed rice or enjoyed alone.
