How to Make Pineapple Shrimp Fried Rice

Pineapple shrimp fried rice is a tropical twist on a classic dish, blending sweet, savory, and tangy flavors. Here’s a simple guide to making it at home.

Ingredients:

2 cups cooked rice (preferably day-old), 1 cup shrimp (peeled and deveined), 1 cup diced fresh pineapple, 2 beaten eggs, 1/2 cup diced carrots, 1/4 cup frozen peas, 2 minced garlic cloves, 2 tbsp soy sauce, 1 tsp sesame oil, salt, and pepper to taste.

Instructions:

1. Prep Ingredients: Chop pineapple, carrots, and shrimp. Beat eggs in a bowl.

2. Cook Eggs: Heat 1 tbsp oil in a wok over medium-high heat. Scramble eggs until set, then remove.

3. Sauté Aromatics: Add another tbsp oil. Sauté garlic until fragrant, then stir in carrots and peas for 2 minutes.

4. Cook Shrimp: Add shrimp and cook until pink (2-3 minutes). Remove and set aside.

5. Fry Rice: Push ingredients to the side. Add a bit more oil, then fry rice for 3-4 minutes, breaking up clumps.

6. Combine: Return shrimp, eggs, and pineapple to the wok. Drizzle with soy sauce and sesame oil. Toss everything well.

7. Season: Add salt and pepper to taste. Cook for 1 more minute until heated through.

Serve hot for a vibrant, satisfying meal! Enjoy the fusion of flavors in every bite.
