How to Make Stir-Fried Black Fungus with Yam

Stir-fried black fungus with yam is a nutritious and delicious Chinese dish, prized for its crispy texture, earthy flavors, and health benefits. Here’s a simple guide to preparing it:

Ingredients:

- 100g dried black fungus (soaked until soft, stems removed)

- 1 medium yam (peeled and sliced into thin strips)

- 2 cloves garlic (minced)

- 1 red chili (sliced, optional for heat)

- 1 tbsp cooking oil

- 1 tsp light soy sauce

- ½ tsp dark soy sauce (for color)

- ½ tsp sugar

- Salt to taste

- 1 tsp cornstarch (mixed with water for thickening, optional)

Steps:

1. Prep the ingredients: Soak the black fungus in warm water for 20 minutes until tender, then rinse and drain. Slice the yam into thin, uniform strips to ensure even cooking. Mince the garlic and slice the chili.

2. Blanch the yam: Bring a pot of water to a boil, add the yam strips, and blanch for 1 minute. Drain immediately to prevent sogginess.

3. Stir-fry: Heat oil in a wok over medium-high heat. Sauté garlic and chili until fragrant. Add the black fungus and stir-fry for 1–2 minutes.

4. Combine and season: Add the blanched yam strips, then pour in light soy sauce, dark soy sauce, and sugar. Toss well to coat. Season with a pinch of salt.

5. Thicken (optional): If using, drizzle in the cornstarch-water mixture and stir for 30 seconds until the sauce thickens slightly.

Serve hot as a side dish or with steamed rice. This dish is low-calorie, rich in fiber, and perfect for a healthy meal!
