For the crust: Mix 200g flour, 50g sugar, and 100g butter until crumbly. Add 3-4 tbsp ice water, knead into a smooth dough, and chill for 1 hour.
For the filling: Combine 150g diced Yunnan ham, 100g cooked glutinous rice flour, 50g sugar, and 2 tbsp honey. Mash until sticky, then divide into 12 balls.
Assemble: Roll the dough into 12 balls. Flatten each, wrap a filling ball inside, and pinch to seal. Roll into a ball, then press into a mooncake mold dusted with flour. Tap to unmold.
Bake: Preheat to 180°C (350°F). Brush with egg wash, bake for 25-30 minutes until golden. Cool completely—flavor improves after 1 day.
