Ingredients:

- 2 tablespoons high-quality matcha powder

- 2 cups heavy cream, chilled

- 1 cup whole milk

- ¾ cup granulated sugar

- 2 large egg yolks

Steps:

1. Prepare the base: Whisk egg yolks and sugar in a bowl until pale. In a saucepan, heat milk over medium heat until steaming (do not boil). Gradually pour the hot milk into the yolk mixture, whisking constantly to prevent curdling.

2. Cook the custard: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Remove from heat.
